Cinnamon

It’s all about experimenting with a favorite spice.

I’m one who loves to experiment in the kitchen; some things turn out well, some not so well. But I keep coming up with several ideas till I get it right.

One of my favorite spices is cinnamon. Of course it’s primarily used in dessert dishes, but cinnamon is one powerful spice that comes in many forms, and a spice that should be respected. I learned how powerful when I tasted the actual spice on its own. Right after that, I thought about what I could use this golden spice on. It didn’t take me long to come up with chicken wings. My friends thought I was crazy, but they said they would try it when the wings were done.

Since cinnamon is a spice, only a small amount can really pack a punch. As a general rule, you use only ¼ tsp. of any spice for any recipe. For me, I thought about using ¼ tsp. for every six wings; however, to enhance the flavor of the cinnamon, I would use ½ tsp. per six wings, I would use red onions instead of yellow or white onions, and I would use less pepper or salt.

My favorite spice pulled through for me once again. The chicken tasted great, and it was a hit with all my friends. So don’t be afraid to experiment with your favorite spice. The worse that can happen is that you don’t like it and you won’t try it that particular way again. But you may try it another way, and can’t get enough of it, like my friends can’t get enough of me adding cinnamon to chicken. Happy cooking!
