Why Canning and Preserving is Important for Special Diets
Not everyone on our planet is able to digest or even cares to consume the same exact menu items which others may relish (no pun intended). In fact often we encounter special dietary requirements that make home canning and preserving the idea way to create meals for those involved. When we make our own canned foods we are afforded the opportunity to take control of what we include in the product as ingredients. We are the ones who control how it is prepared. In short, those canned foods represent an extension of what we are. We are in command here.

Since there are people who are on special diets it is often difficult to find a commercial selection of foods to satisfy their palate. By canning our own products we can make what ever adjustments are required to accommodate these people. If low salt is a necessity it shall be done. If reduced sugar is needed consider it accomplished. Those who are on a gluten-free diet can readily be accommodated without any bother what-so-ever.
It isn’t easy to locate a selection of special diet foods for those who need them. A visit to the grocery store may show at best one or two short shelves of these foods, therefore it is the ideal situation to simply make our own canned foods.
Cross contamination is a very critical problem. Often a factory will make several food packages which are vastly different. As an example, a packaged food may not contain dairy products but since it is packaged in the same factory as other dairy related foods it could very well become contaminated. In some cases this could result in a life or death situation. This is the primary reason that the federal government has made it mandatory for companies to list on their labels if they process foods such as this in addition to the normal packaged products.
Economy wise those special food products cost considerably more than the regular versions but if they are produced at home in your kitchen the cost is minimal. This can save money in the long run.
Several types of special foods include those without sugar or those without salt. Popular foods such as pickles can readily be canned with less salt allowing those people with salt free diets to enjoy the same treats as the rest of us. Sulfuring is a special process used to allow fruit to retain their normal color and nutritional value however there are some people who are allergic to the sulfite and must only consume foods that do not contain it. Canning meets this need very well.
Now that you understand how we can control the contents of our canning ventures to suit those with special diets you can faithfully create a multitude of meals for those with various afflictions.
