Things to Do with Tuna

Exciting ways to use this cupboard staple for easy cheap meals for all the family.
Tuna is a food that most people have in their store cupboard. Oily fish is also an important part of a balanced, nutritious diet. There are many exciting ways to use tuna to feed the family. Here are just a two to tantalise your tastebuds:
Tuna Fishcakes
- Boil and mash six medium old potatoes. (Left over mash can be used).
- Add a knob of butter, a splash of milk and some black pepper.
- Drain two tins of tuna and add to the potatoes.
- Add either drained tinned sweetcorn or cooked florets of brocolli cut into small pieces.
- Stir mix until tuna and veg is equally distributed.
- Divide mix and shape into patties.
- Dip patties first in flour, then in egg.
- Roll in breadcrumbs or crushed ready salted crisps.
- Bake in oven on medium heat until golden brown.
- Serve with salad and mayonaise (or dip of your choice)
Tuna Pizza Toasts
- Cook four slices of bread on one side under the grill.
- To the uncooked side add tuna and halved cherry tomatoes.
- Cover with grated cheese.
- Return to the grill until bubbling.
