Things to Do with Tuna

Exciting ways to use this cupboard staple for easy cheap meals for all the family.

Tuna is a food that most people have in their store cupboard.  Oily fish is also an important part of a balanced, nutritious diet.  There are many exciting ways to use tuna to feed the family.  Here are just a two to tantalise your tastebuds:

Tuna Fishcakes

  1. Boil and mash six medium old potatoes. (Left  over mash can  be used).
  2. Add a knob of butter, a splash of milk and some black pepper.
  3. Drain two tins of tuna and add to the potatoes.
  4. Add either drained tinned sweetcorn or cooked florets of brocolli cut into small pieces.
  5. Stir mix until tuna and veg is equally distributed.
  6. Divide mix and shape into patties.
  7. Dip patties first in flour, then in egg.
  8. Roll in breadcrumbs or crushed ready salted crisps.
  9. Bake in oven on medium heat until golden brown.
  10. Serve with salad and mayonaise (or dip of your choice)

Tuna Pizza Toasts

  1. Cook four slices of bread on one side under the grill.
  2. To the uncooked side add tuna and halved cherry tomatoes.
  3. Cover with grated cheese.
  4. Return to the grill until bubbling.
