Some Suggestions for Leftovers
There are times when we cannot avoid having leftovers. When a member of the family fails to come home at a mealtime or when the family decides to eat out during untimely occasions when food had been prepared at home, food may be left over for the next meal. To throw away food is a wasteful thing to do.

With a little ingenuity and imagination any leftover food can be used for another meal. An important thing to remember when dealing with leftovers is changing their form. A dish of reheated vegetables tastes flat and is devoid of appetite appeal. You can do something with mashed or sieved vegetables. You can turn them into soups, croquettes, or fritters.
Starchy vegetables such as legumes and cereals as a well as pasta and noodles lend themselves to such dishes as loaves, dumplings or roast.

You can convert baked beans into a fragrant brown roast using tomato sauce or any sauce you like for topping.
Add cooked macaroni to chopped peanuts and you’ll have a delicious stuffing for peppers or cabbage.
Leftover cakes might be combined and used for topping for fruit salad or base for pudding, and may be mixed with dry cereal like granola.
A two-day old fruit pie can be heated and then broken into pieces topped with a mixture of fruits and nuts served with whole milk.
Ice cream which is losing its form and looks can be whisked lightly and you’ll have a frothy milk shake.
Seasoning is important in making new dishes from leftovers. Don’t be afraid to experiment with new herbs and seasonings. Recognize the value of garnishes.

When I was a kid, mom had a plastic container near the sink basin for things to go to the chickens, a bucket for things to feed to the dogs, a bin for things to offer things like corn cobs to the cow and a bag by the back door for things to throw onto the compost pile for fertilizer (and the sparrows) and of course, a plate & bowl on the floor for anything to offer the cats.. but first if she found a bowl with some brown lumpy stuff in from the ‘fridge she’d call me to the kitchen and say ‘Hey Joel, -eat this this quick before I give it to an animal!’

I love leftovers. I hardly throw anything out. If nothing else comes to mind put it all in a pot and make soup.
