An easy to make rhubarb & strawberry crumble.
My husband loves tart deserts so I am always in a look out for such recipes. The Rhubarb and Strawberry Crumble is the perfect mix between sweet and tart and an absolute favorite in our house. It’s easy and cheap to make, will take you a little over an hour to prepare and bake. So here are the ingredients you need for this delicious desert:
For the crumble:
-150 grams flour
-150 grams sugar
-100 grams butter
-50 grams sliced almonds
For the fruit mixture
-1/2 vanilla bean or 1/2 tablespoon vanilla extract ( i extract, it’s cheaper and tastes almost the same)
-300 grams strawberries, halved
-250 grams rhubarb cut into 3 centimeters long pieces
-75 grams sugar
-butter to coat the baking dish
For the topping:
-vanilla ice cream
Preheat the oven at 200 degrees C. Combine the dry crumble ingredients in a bowl. Add the butter and use your hands to rub it in until the mixture looks like bread crumbs. Leave aside and prepare the fruits.
In a large bowl add the sugar and vanilla extract ( or scrape in seeds from the vanilla bean) and whisk to blend well. Add the strawberries and rhubarb and mix to coat. Place the fruit mixture in a baking dish which you coated with butter.
Add the crumble mix on top making sure it completely covered the fruits, otherwise the juice bubbling though will make the crumble soggy.
Bake for about 40 minuted until the topping is crisp and lightly browned. Serve hot with vanilla ice cream on the side.
