Recipes for Leftover Mashed Potatoes

Have an overabundance of potatoes? Mashed too many for supper and don’t want to throw them out? Here are some recipes to use them up.

*Just remember, when you make mashed potatoes, add butter and salt to individual portions at the table, so any leftovers can be used in a variety of recipes.

Chocolate Potato Cake

Cake made from potatoes? It may sound scary, but you should try this easy and moist cake before you knock it.

  • 1 c. butter, softened
  • 2 c. sugar
  • 2 eggs
  • 1 c. cold mashed potatoes
  • 1 t. vanilla
  • 2 c. flour
  • 1/4 c. baking cocoa
  • 1 t. baking soda
  • 1 c. milk
  • 1 c. chopped nuts

Cream butter and sugar until fluffy.  Add remaining ingredients slowly in the order listed.  Bake at 350 degrees for 40 minutes (or until a toothpick come out clean) in a greased 13×9 inch pan.  Top with whipped cream, ice cream, chocolate syrup or all three!

Potato Scones

These scones are moist and lovely.  Add herbs to the dough and spread with butter for supper, or add a dash of sweet spices like cinnamon or nutmeg and spread with jam or honey for breakfast.

  • 2 c. flour
  • 1 T. baking powder
  • 1 t. salt
  • 3 T. cold butter
  • 1 c. mashed potatoes
  • 1/3 c. milk
  • 1 egg

Combine dry ingredients and cut in butter until blended and crumbly.  Stir in other ingredients, knead until it’s not “sticky”, this may take awhile, be patient.  Form a circle about an inch thick and cut into wedges.  Separate and bake at 400 degrees for 15 minutes or until golden.

Other Ways To Use Those Spuds Up

  1. Mashed potatoes are a good way to thicken up soups and stews.
  2. Pipe mashed potatoes like frosting and decorate meatloaf.
  3. If you’re making twice-baked potatoes, add some leftover mashed potatoes to the filling to really fluff up that filling.
