Raw Carrot and Cauliflower Salad

EASY / PREPARE AHEAD

For a quick alternative, marinate pork loin steaks instead.

Vztbsp mustard seeds

1tsp cumin seeds

2tbsp sesame seeds, plus extra for serving

500g (11b 2oz) carrots, peeled and grated

1 small cauliflower, broken into florets

1tbsp clear honey

zest and juice 1 lime

small handful fresh coriander, chopped

1 Heat a dry frying pan until hot. Add the mustard seeds and heat for 30 seconds, then add the cumin seeds and heat a little more until the mustard seeds start to pop. Remove from the stove, transfer to a bowl and allow to cool. In the same pan, fry the sesame seeds until toasted, then set aside.

2 In a clean bowl, mix the carrots and cauliflower. Add the honey, lime zest and juice to the spices, and drizzle over the salad. Toss with the coriander and sprinkle with sesame seeds before serving. Per serving: 85 calories, 4.5g fat (0.8g saturated), Юд carbohydrate
