Production of Popular Native Wines in the Philippines

Native wines produced in the Philippines are all 100% chemical-free because they are all produce in a natural process.

If one day you happen to pay visit in the Philippines, this article will be of help to you especially if you are a native liquor or wine drinker or collector.

Usually if we visit a certain place, we tend to get familiarize first with the kind of foods offered to us. Aside from the foods, the next thing that we get familiar with is the drinks. Food and drinks always go hand in hand.

The following are list of wines locally manufactured in the Philippines. These are 100% chemical-free because they are all produce in natural methods.

“Tapoy” or Rice Wine of Mountain Provinces

Tapoy is similar to the rice wine of Japan called sake. This kind of wine is widely produce in the provinces of Cordilleras, specifically by the Ifugaos, the builder of the world -famous Rice Terraces, by the Igorots, and other ethnic tribes in the Mountain Provinces.

This kind of wine is basically made by soaking raw glutinous rice in hot water for I hour. Drain and steam for 25 minutes and then spread in a tray to let it cool for 2 hours.

The yeast and rice is then combined by hand until blended (as you can see in the picture). The mixture is then transferred in a container covered tightly with a lid and stored in a dry place and allow to ferment for 1 month. Separate the liquid from the remaining rice mixture. The liquid is tapoy or rice wine and the residual is rice mash.

Lambanog: Southern Tagalog Region

Lambanog are commonly popular in Southern Tagalog Region most especially in the provinces of Quezon and Laguna and is available all throughout the country. This wine is produce from coconuts.

Lambanog can be produce using the process of distillation similar to the fractioning in oil refinery. In the distillation factory gallons of “tuba” is pour in a big container where it is heated to a certain degree such that the alcohol content of “tuba” will boil and evaporate. The evaporated alcohol will then be condensed using flowing water at the top of the distillation chamber to liquefy the alcohol in gaseous phase. This liquefied alcohol is already the wine that is extracted from “tuba”. The distillation process usually takes one to two hours to collect gallons of wine and it depends on the amount of heat applied

  8. There’s another called Panggasi (rice wine) made by the Subanen tribe of Zamboanga peninsula.

    I’m sure there are still a number out there just waiting to be re-discovered.

  14. Butuanons have a local wine named “lacsoy”. It is distilled from Nipa (palm)sap.It is said to bring back Butuan’s hundred years of tradition. It’s been the native Butuanon’s drink even before the coming of the Spaniards. When in Butuan, try “Don Egmedio’s” Lacsoy. It is definitely the best tasting local wines in the island.

  18. Making wine is very unigue and depends if you want to be different from the rest of the world who make good and profitable wine. For me if I start my own winery, my purpose is the wine must be a medicine to our body and mind. If you can analyze all the profitable wine and alcohol, the alcohol content higher than 80% proof is not healthy to our body if you’ become addicted. Design a wine that will not affect our mind and and body and still in control .This is just a matter of chemistry formula and processing to have a healthy and profitable wine. The wine should be not be dangerous that will affect your your lungs and mind to mulfunction even though you’re addicted to drink as long as you drink this moderately. Most of the alcohol on the market in the Philippines wiith higher alcohol content are very dangerous. Your idea if you have a good formula will have a good result. Good luck to your success.

  25. Pharmacist was no help, but I will be going to the States at the end of the month. I’ll buy a lot of wine making chemicals and paraphernalia and send back a Balikbayan box. I have some stuff here, but no chemicals. I live on Negros and will get back to you guys when I return at the end of May.

Over the last 5 years when I have visited the philippines I have been making wine in Cebu everything from Mango to Jackfruit and all has turned out very good (my in laws save me 1 bottle from 100 if I am lucky…lol). In the next 12 months I am planning to move from the UK and go into production. I too have problems in getting the yeast, nutrients etc in the Philippines so I am also planning to import these items and make them available as I am sure that this “hobby” would be popular in the Philippines.

  29. Sir, maybe you can consider posting in this link about sugarcane wine or basi/ fayash from Mountain Province.. it is a wine which is really organic because they are not using yeast. They use a certain fruit from a wild tree.

Hey, we are selling tuba wine anyone interested?? but our tuba wine is not just simply taken from the coconut tree and after a few weeks being sold out, making something special from simple things is a success, out tuba wine are stored for one year, before selling it out, and it comes in a beautiful container with our compnay name on it. If you try it, you will be proud of our own product, like european people are proud of thier own made wine made of grapes!… :) since we are just startng our business, we are limitting orders 1 to 10 galoons for every customer ,price of one galoon tuba is at 600 php for a one year old tuba the price is very reasonable. :)

    My name is Angelo Roncari, Italian-American.. back in the early 60’s at the age of 12, I helped granpa and dad make grape wine in the basement in Detroit Michigan USofA. 200 gallons/yr was the law for home brewers, dad and gramps and family consumed 200 gal in 10 months then they would buy cartons of 4 gals per carton at the grocery to tie them over till the next grape season.
    I helped bring 40 cases of grapes down to the basement and then squeeze the grapes with the long handled wine press, the entire basment was devoted to this yearly making of wine.
    The most memorable taste of wine in my mind to this day is granpas white wine made from California Cucamonga grapes, thats what he called them. They were large and very sweet. That wine was addictive in flavor and quickly intoxicating, my guess is the alcohol content was way above 10%. They used old oak, 50 gal, whisky barrels, charred on the inside, , to ferment the must, then decant into washed 1 gal glass wine bottles, then decant again the final product. One year a sad thing happened, much of the wine went vinegar.
    I now live in Pagadian city Mindanao.. when in peak season mango prices are low enough to make lots of wine, but I need supplies.
    I will travel to any location to buy supplies. Ill check this site periodically to c if anyone has posted a supplier. If I locate one I will post.

  42. Re Jessie Ann Bojo’s research on cassava wine. The Philippine Root Crop Research and Training Center at VSU in Baybay, Leyte has developed a taro wine. No mold or yeast is used. Can you tell me more about your cassava wine project? Any wine in a bottle already, the name of the fermenter, and how much?
