Pink Cookies

There is always room for pink cookies. Feel free to add icing, sprinkles or M & M’s!

Pink Cookies #1

1 cup cream

3 beaten eggs

3 teaspoons baking powder

1/2 teaspoon peppermint

1 teaspoon salt

1 cup soft butter

2 teaspoons Baker’s Ammonia (Purchase at drug store)

2 cups sugar

1 teaspoon pink food coloring

Heat cream to boiling point, add ammonia and set aside to cool.  Put the cup of butter, eggs, salt, sugar, pink coloring and peppermint in a large mixing bowl.  Mix until well blended.  Add flour with baking powder alternating with cream and ammonia.  Drop by teaspoonfuls onto greased cookie sheets and press with bottom of glass.  Sprinkle with sugar.  Bake at 350 degrees for about 8 to 10 minutes.

Pink Cookies #2

2 cups sugar

1/4 pound butter, melted-add enough oil to make a cup

1 tablespoon vanilla

3 eggs

1 cup milk

1 teaspoon peppermint

1 teaspoon red food coloring

1 tablespoon Baker”s Ammonia, melted in 2 tablespoons hot water

Beat sugar, butter-oil, vanilla, eggs, milk, peppermint, coloring, and Baker’s Ammonia with electric mixer about 7 minutes.  Add 1 cup flour and 3 teaspoons baking powder.  Beat with mixer, then add 4 cups flour and 3 teaspoons baking powder.  Beat with mixer, then add 4 cups flour.  Drop teaspoonfuls onto ungreased Teflon-coated cookie sheet.  Bake at 425 degrees, 7 to 9 minutes.  Do not let brown.

Pink Cookiess #3

3/4 cup half & half

1/2 cup butter

1/2 cup Crisco

3 beaten eggs

2 teaspoons Baker’s Ammonia, dissolve in 2 tablespoons hot water

2 teaspoons baking powder

1 cup sugar

1/2 teaspoon salt

1/2 teaspoon vanilla

1 teaspoon red food coloring

1 1/4 teaspoons peppermint extract

4 cups unsifted all-purpose flour

Mix ammonia and half & half and set aside.  Cream butter, Crisco and sugar until light and fluffy.  Add beaten eggs and mix again.  Add vanilla, red coloring and peppermint and blend well.  Mix flour with baking powder and salt.  add flour mixture alternately with cream and ammonia mixture until well blended..  Cover and refrigerate a few hours or overnight.  Grease cookie sheets drop by teaspoonfuls on cookie sheet.  Sprinkle with sugar and bake at 350 degrees for 10 to 12 minutes.
