Pappardelle with Lamb Ragu

Ingredients:
250g pappardelle
1/4 tsp crushed chillies
250g minced lamb
1 1/2 tsps Worcestershire sauce
4 spring onions, finely sliced
1 1/2 tbsps garlic oil
1 tsp dried mint
1 can chopped tomatoes
1 tsp dried oregano
A pinch of salt
Grinding of pepper
1 x 15ml tbsp redcurrant jelly
To serve (optional):Fresh mint
A large pan of water should be boiled for the pasta. Warm the garlic oil in a small pan and cook some spring onions. Stir those onions on oil for approximately a minute. Add chilli and the herbs and stir again before meat is added. Cook all together for a few minutes. When meat starts to lose pink color add tomatoes. Stir all together and add Worcestershire sauce, salt and pepper. Redcurrant jelly should be added, as well. Stir all together carefully and wait until it bubbles. Let all together cook partially covered for about 20 minutes.
Salt boiling water and cook pasta according to instructions. It’s clever advice to cook pasta for a few moments less than suggested on package. Drained pasta should then be dressed with the lamb ragu. A little bit of fresh mint can be added on each dish served.
