Pan-glazed Chicken

Honey & balsamic vinegar lend a sweet flavor to chicken in this stove-top supper. Served over rice, the tangy chicken combination makes a delicious meal on a busy night.

Prep/Total Time:  20 min.

1 pkg. (6 oz.0 instant long grain & wild rice mix

4 boneless, skinless chicken breast halves (4 oz. ea.)

1/4 tsp. salt

1/4 tsp. pepper

2 tsp. olive oil

2 tbsp. balsamic vinegar

1 tbsp. honey

2 tsp. dried basil

Prepare rice according to pkg. directions.  Meanwhile, sprinkle chicken w/ salt & pepper.  In lg. skillet, cook chicken in oil over med.-high heat for 5 min. on ea. side or til juices run clear.

Combine vinegar, honey & basil; pour over chicken.  Cook for 1-2 min. or til sauce is heated thru.  Serve over rice.

Yield:  4 servings.
