New England Fish Chowder

New England Fish Chowder is low cholesterol recipe.

Ingredients:

2 tbsp special oil

½ cup chopped onions

1 pound cod, halibut or similar fish, cubed

3 cups bottled clam juice

1 cup diced potatoes

¼ tbsp white pepper

2 cups hot skim milk

1 tbsp minced parsley

Procedure:

Heat the oil in a saucepan; sauté the onions 10 minutes but do not let brown. Add the fish; cook 1 minute. Add the clam juice, potatoes and pepper. Bring to a boil and cook over low heat 20 minutes. Stir in the milk and parsley; heat but do not let boil.

Serves 6.
