Mummu’s Heavenly Chocolate Merinque Pie
This is a Amazing Pie and the One I Entered in Our Fall fair.
The pie crust is made ahead a single crust;
2 cups of pie and pastry flour
1/2 cup of lard
2 tablespoons of butter
1 tablespoon of white vinegar
5 tablespoons of ice cold water
1/2 tsp salt
Cut the lard and butter in a bowl until its in chunks add the other ingredients
form into a ball and roll out on a floured surface I use floured wax paper
then just place in pie plate, pierce with a fork in several places and flute the pie edges
bake at 350 degrees for 20 minutes let cool.
The filling:
Baking chocolate
milk and sour cream
2 egg yolks
3/4 cups of sugar
1/2/tsp salt
5 tablespoons of flour
almond extract
1 tablespoon butter
2/3 cups of chocolate chips
whisk together 1 cup of milk or cream and 1/2 cup of sour cream
add 3/4 cups of sugar ( I use brown), 1/4 tsp salt, and 2 slightly beaten egg yolks,
then place in a pan on low heat and add 1/1/2 squares of baking chocolate
and 5 tablespoons of flour.
stirring constantly about 20 minutes until very thick it will not get any thicker later in the oven.
when it is all thickened remove from heat and add one table spoon of butter 1/4 teaspoon of almond extract
then fold in 2/3 cups of chocolate chips
Place in pie crust and make merinque: 3 egg whites beaten with 1/8 teaspoon of salt than 5 tablespoons of sugar
beat until it form peaks than place on pie and brown peaks at 375 degrees for 10 minutes
Sprinkle with sliced almond and a dusting of cocoa powder
