Mixed Vegetable Relish

Vegetables will soon be coming in from your spring gardens. After putting up your winter supply, if you still have a surplus, don’t let them go to waste. Try this delicious vegetable relish. Mixed Vegetable Relish

When your garden starts coming in and you don’t know what to do with all those good vegetables, I have the perfect solution. Make this delicious vegetable relish. It spices up winter meals and goes with just about anything. It will liven up all your meals and get you compliments.

Chop up a cup of each of the following vegetables or substitute any other vegetables you have in plenty.

cucumbers, turnips, onions, cabbage, carrots, string beans, wax beans or both, celery

Mix together:1/2 cup salt and 2 quarts water

Mix these separately.

2 cups vinegar

2 cups sugar

2 turmeric

1 tbs. mustard

1 tbs. celery seed

Let vegetables soak overnight in the brine of salt and water. (You may want to soften the root vegetables by boiling slightly). Drain and add all the vegetables to the vinegar, sugar, spice mixture. Bring to boil, lower heat and simmer for 10 to 12 minutes. Pour into sterilized jars and seal.
