Maja Blanca Ala Juny Style

Maja Blanca is a common Filipino dessert cooked and prepared one common way, but taste differently depends on the ingredients.

Maja blanca is easy to cook and prepare, however, the taste varies from add-on ingredients. The primary ingredients are cornstarch, sugar and coconut milk. To break the monotony of its taste, experts add other ingredients for a change. Some added sweet corn, ripe jackfruit meat, pineapple and use yam instead of cornstarch. You can also add toppings according to your desire. Grind/pounded peanut, browned coconut curd (latik) or sweetened coconut pulp can be use as toppings. Maja blanca ala juny style is easy to prepare, yummy and I promise you guys, you will love it (^_^)

Here’s a simple way to prepare and cook this tasty maja blanca ala juny style :)

Ingredients:

5 cups cornstarch flour

16 cups fresh coconut milk

4 cups evaporated milk

2 cups cream style sweet corn (or you can use a blender to grind a whole kernel if cream style is not available)

5 cups sugar (brown or refined)

Steps:

1.       In your cookware, put the cornstarch flour, sugar and cream style sweet corn.

2.       Pour the fresh coconut milk slowly while mixing to dissolve the cornstarch.

3.       Add the evaporated milk and cook over medium heat (very low fire)

4.       Stir constantly to avoid the cornstarch from burning at the bottom of your pan.

5.       Keep stirring until thickened (you can hardly see it boil due to very low fire)

6.       When it’s done, remove from fire and pour into molding pan while it’s hot.

7.       Let it cool before refrigerating.

8.       Serve cold- this mixture is good for 30 servings.

Note:

Ø  Some find their maja blanca a bit hard and not spongy soft because they added water only to comply with the needed measurement. Commercial maja (for sale) mostly are bit hard or too soft. (watery)

Ø  In order to have a soft and tasty maja blanca, never add water or never cut/ make less with the ingredients needed.

Ø  Instead of cream style sweet corn, you can add ripe jackfruit meat (strip the meat) canned pineapple tidbits or fresh young coconut meat (strips)

Ø  Maja blanca mixture cools easily so make sure to prepare your molding pan before start cooking.

Ø  If you want to add some toppings, you can sprinkle ground peanut or browned coconut curd (latik)

Ø  For variation, other uses yam or squash instead of cornstarch flour, with same ingredients and cooked the same process.
