How to Make Whole Wheat Crepes
I love healthy recipes and this one is so easy to make! You can fill them with your favorite sweet or savory filling or just eat them with some butter and syrup. The best part is you only need five ingredients for the crepes that you probably already have in your pantry! They are also a great Vegetarian breakfast!
These are lowfat and healthy with only 135 calories per serving (2 crepes), 6g protein and 3g fiber. Rich in B12 and Calcium, they are favorite to make in our house.
In a small bowl or measuring cup, Start with 3/4 cup + 2 Tbsp Whole wheat flour (I get mine from the bulk section at Winco). Add a pinch of salt and stir to blend.
In a separate bowl mix together 1 egg, 1 1/4 cups of milk and 1 tsp oil. Wisk to blend.
Then add the flour/salt mixture and stir until smooth.
Set your kitchen timer for 30 minutes and let rest at room temp without stirring.
While you’re waiting.. clean up and make a filling (if desired) along with some coffee or tea!
When your 30 minutes is up, stir the batter again because some of the flour will have settled on the bottom.
Then you can start cooking!
Heat a lightly oiled skillet over medium/high heat until HOT.
Using a 1/4 cup measuring cup, drop batter into pan and tilt pan to spread batter around.
Cook for 2 minutes and flip with spatula.
Remove to plate and cook remaining crepes. You should have 8 crepes when you finish.
You can cool them individually and store them in a airtight container in the fridge if you want to eat them later. Just don’t stack them while they are hot or they will get soggy. If you plan to eat them right away, go ahead and stack them up and place them in the microwave or in a warm oven.
Like I said at the beginning, you can fill them with your favorite fruit and add a little whipped cream if you like, or you can have them savory and use chicken or grilled vegetables. Either way they are really good!
I personally like to mix 1/2 cup of low fat cottage cheese, 1 tsp cinnamon, 1 tsp honey and either 1/4 cup fresh blueberries or 1/8 cup raisins and use that as a filler. :0) Here’s what it looks like with my mixture using blueberries.
