- 300 grams small ripe tomatoes washed and cut in half
- 2 tablespoons olive oil
- 1 tablespoon dry oregano
- 1 teaspoon dry thyme
- 3 garlic cloves crushed
- 1/2 teaspoon Salt
- 1/2 teaspoon pepper
- 1 cup of fresh basil
Preheat oven to 300 degrees F/150 degrees C /Gas mark 2.
Place the halved tomatoes on in a flat baking tray which has been lined with a sheet of parchment/oil paper. Sprinkle the oregano and thyme over the tomatoes and drizzle the oil over it. Season with salt and pepper.
Bake in oven for half an hour.
Remove from oven and place the crushed garlic in the tray alongside the half baked tomatoes. Return back to oven and bake for a further half an hour.
Take the baking tray out of the oven and transfer the grilled tomatoes into a food processor/blender. Add the basil and blend all the ingredients. Transfer into a clean glass jar, close with lid and refrigerate till ready to use.
