Banana icecream is absolutely delicious and in actuality easy to make! Just follow this recipe and you’ll be eating this delicious treat in no time!
2 cups half-and-half cream (I’ve found heavy cream works as well)
1 pinch of salt
2 eggs, lightly beaten
2 cups heavy whipping cream
2 1/2 cups evaporated milk
1/2 cup condense milk
1 teaspoon vanilla extract
1 piece of spice or a little bit of nutmeg powder
2 cups mashed ripe bananas (4 to 5 medium)
Heat the half-and-half, spice and condense milk in a sauce pan on a very low fire then stir in salt until dissolved. Whisk the eggs and pour them into the milk mixture. Cook and stir over low heat until the mixture coats the back the spoon. Remove the spice. If you used nutmeg powder then you don’t have to remove anything.
Remove mixture from heat and place the pan in a bowl of ice water. Continue stirring it 2 minutes. Stir in the whipping cream, evaporated milk and vanilla. If you do not have an icecream maker then put plastic wrap over the bowl and refrigerate overnight. If you do then simply move on to the next step.
Blend the bananas until completely puree. Strain them over a bowl until only the plup remains. Slowly pour the milk mixture into the icecream maker and allow to get cold. When its becoming creamy add the bananas. If you do not have an icecream maker then the adding of the bananas must be done the next day. The mixture should be frozen by then. Leave for 2 minutes to defrost a little. Add the banana mixture and stir quickly until the banana and milk mixture are completely mixed. Immediately place back in the fridge.
Freeze overnight or for 4-6 hours. The longer you leave the icecream the better texture it will have. Serve with a wafer of your choice.
