How to Bake Healthy Treats Using Raisins

Raisins are high in antioxidants and have lots of fiber. According to researchers, raisins aid digestion, increase energy, maintain bone health, help prevent tooth decay, and the iron provided by raisins can help prevent anemia. There are so many wonderful recipes that use raisins.

Chewy Raisin Bars

1 1/2 cup baking mix

1 1/2 cups quick-cooking oats

1 cup packed brown sugar

1/2 cup margarine or butter, softened

1 egg

1/3  cup raisins

1/3 cup chopped nuts

Heat the oven to 350 degrees.  Mix all the ingredients with a fork until moistened.  Press mixture evenly in an ungreased rectangular pan, 13×9x2 inches.  Bake for 15 to 17 minutes.  Cut into bars.  Enjoy!

European Cookies

2 1/4 cups brown sugar

4 eggs

2 1/2 cups whole wheat flour

1 tsp. cinnamon

1/4 tsp. cloves

1 cup raisins

Beat together eggs and brown sugar.  Sift dry ingredients and add, blending well.  Stir in raisins.  Spread in cake pan.  Bake at 350 degrees for 15 to 29 minutes.  Cut while warm and roll in powdered sugar.  Perhaps a little icing on top of each raisin bar would be a nice addition.

Tasty Raisin Banana Cookies

3/4 cup shortening

1 cup brown sugar

3 mashed bananas

1 egg

1 tsp. salt

1 1/4 cups rolled oats

3/4 tsp. cinnamon

1 1/2 cups whole wheat flour

1/2 tsp. soda

1 cup semi-sweet chocolate chips (optional)

Cream shortening and sugar until fluffy.  Add banana and egg.  Blend well. Sift flour, cinnamon, and salt together.  Add to banana mixture along with the rolled oats.  Stir in chocolate chips if desired.  Drop from a spoon onto a greased baking sheet.  Bake at 350 degrees for 12 to 15 minutes.  Makes 2 1/2 dozen cookies.  Wow!
