Garlic Paste: How to Make It How to Use It

Garlic Paste is used in many recipes and can add a ton of flavor but it has some health benefits as well.

Garlic Paste is a paste made of garlic that you can use for many different recipes.  It is basically a way to make garlic spreadable, but it also goes great in sauces.  Some people actually use it as a spread on bread for sandwiches.  Some people even use it for health purposes as you can see from this article:  http://www.ehow.com/how_2103210_use-garlic-paste-treat-body.html.  It is really good brushed on to grilling meat and seafood.

Making a Garlic Paste

To make a garlic paste peal several heads of garlic then smash each head with a large knife, by large I mean fat and long.  Place the head under the the knife with the knife laying flat side up, not blade side up or opposite of the blade side up.  It must be laying as flat as possible over the garlic, the garlic head should be under the thickst part of the knife about an inch up from the handle. Then at the place where the head is under the knife punch the knife down on the garlic to smash it.  One good punch should be enough.  Use the soft side of your fist (the side opposite of the thumb), do not use the top of the hand or the knuckles.  After all of the heads are smashed gather them to a pile, and sprinkle just a little olive oil on them and about a pinch of sea salt.  Then begin chopping the garlic up finely, after you have it chopped up pretty good take you knife and drag it over the garlic, pushing the blade down on the garlic as you pull the garlic further, do this several times until you have a nice paste.

Roasted Garlic Paste

You can also make roasted garlic paste which is really good on toasted bread.  All you do is roast the garlic first and then follow the instructions above with the roasted garlic.  Here is how to roast garlic. 

Take an entire head of garlic and slice it in half, cutting across the middle, not top to bottom.  Drizzle the garlic with olive oil and wrap the halves in aluminum foil.  Do each half of the head seperately, then place the the foil wrapped head halves on a cookie sheet and roast for 45 minutes at 375 degrees.  Then it should be all soft and spreadable.  Use to make garlic bread, spread it on crackers, or make dips with it.

Ginger Garlic Paste

To make ginger garlic paste simply dice up some ginger like you do the garlic and then add it to the cutting board with the garlic, olive oil, and salt and drag the knife over it as explained above.
