Fillings for Potato Chops, recipes and suggestions for Vegetarians
1) Dried Fruits and Nuts:
Heat oil in a small pan lightly fry the chopped onion till golden brown and then add the raisins and chopped nuts. Mix all ingredients together and then season with salt and gharam masala powder(optional). Turn off the flame.

2) Cheese and Onion:
Mix together 200 grams of Grated Cheddar Cheese with 1 or 2 tablespoons of grated onion and salt to taste.
3) Mixed Vegetable:
Heat oil in a pan and add ginger-garlic paste. After couple of minutes add chopped onion and tomato. Fry for about five minutes and then add chopped raw vegetables like carrots, peas, french beans, cauliflower, etc. When the vegetables are done(not too soft) add the gharam masala powder(optional), black pepper powder and salt as per your taste. Cook for another two minutes and turn of flame.
To Make the Vegetable Chops: Take sufficient amount of mashed potato to form a ball(small or big, whatever you like). Make a small well in centre of the ball and fill with the filling of your choice. Fold over the potato to close the well. Then flatten the potato ball( just a little bit to form a flat round in the centre) on a wooden board dusted with flour and fry. When one side is brown turn the chop over in the pan and fry till both sides are brown.
Serve hot with tomato ketchup and coconut chutney. Tamarind chutney is also a great accompaniment for Vegetarian Chops.
Vegetarian Chops are a great party snack or tiffin box lunch.
