Potluck Appetizers and Dips

Corn Cheese Dip

Ingredients :

  • 2 fresh corn on the cob, cooked
  • 2 green onions, sliced 
  • 2 ounce diced drained green chilies
  • 1/4 cup diced roasted red pepper 
  • 1/2 tablespoon chili powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon crushed red pepper
  • 1/2 cup sour cream 
  • 2 cups Cheddar cheese, shredded 
  • 1/2 cup mayonnaise 
  • 1 round pumpernickel bread, unsliced 

Instructions :

  • Remove corn from cob. Place in a large bowl. Add cheese, scallions, green chilies, and roasted red pepper. Set aside.
  • Combine remaining ingredients, mix well in a small bowl. Pour over corn mixture and toss until coated. Refrigerate or until ready to serve.
  • Cut a hole in top of bread with serrated knife (about 3 inches in diameter). Hollow out bread, leave 1 inch around it. Pour dip mixture into bread. Cut the top of bread and hollowed out pieces for dipping.    

Potluck Salads

Corn Pasta Salad

Ingredients:

  • 3/2 cup pasta
  • 1 cup corn, boiled with a little salt, drained 
  • 1 large carrots, peeled, cut lengthwise 
  • 1 medium green bell pepper, cut into matchsticks 
  • 1/2 cup cheddar cheese, shaved rough
  •  1 tablespoon olive oil
  • 2 tablespoons plain yogurt
  • 6 tablespoons French dressing

Instructions :

  • Cook the pasta in boiling water for 7 minutes until tender. Rinse with cold water then drain. 
  • In a large bowl mix the pasta with carrots, peppers, corn and cheese. Pour yogurt, French dressing, olive oil and mix until blended with pasta mixture. Ready to serve    

Potluck Main Dishes

Sweet Corn Fried Rice

Ingredients:

  • 2 cup cooked rice
  • 1 egg, beaten 
  • 3 ounce shrimp, cooked
  • 2 ounce sweet corn, cooked 
  • 3 ounce chicken fillet, cubed, cooked 
  • 5 meat ball/fish ball, cubed
  • 1 clover garlic, chopped
  • 3 shallots, chopped
  • 2 red pepper, grinded
  • 1 tablespoon tomato sauce 
  • 1 tablespoon soy sauce
  • 1 leeks, chopped1 tablespoon vegetable oil
  • 2 tablespoons sesame oil
  • 1 teaspoon pepper powder
  • Salt to taste

Instructions:

  • Heat vegetable oil and sesame oil. Stir-fry garlic, shallots and red pepper. Add chicken, shrimp, sweet corn and meatballs, stir briefly until slightly cooked. Add the egg, scramble. 
  • Combine the mixture, white rice, leeks, tomato sauce, salt and pepper, stir until blended with spices. Served with a decorated as necessary.    

Potluck Side Dishes

Basil Corn Fritters 

Ingredients:

  • 1 canned sweet corn, drained
  • 4 small shallots
  • 2 cloves of garlic
  • 1/2 teaspoon coriander powder
  • 1/4 teaspoon turmeric powder
  • 1 teaspoon salt
  • 1/4 teaspoon pepper powder3 stalks of basil 
  • 3/4 cup of all purpose flour
  • 1 egg, beaten
  • Vegetable oil

Instructions:

  • In a food processor grind the shallots, garlic, coriander, turmeric, salt, and pepper into a paste. 
  • In large bowl, combine the paste mixture with corn. Add Basil, flour and egg. Mix well.
  • Pour vegetable oil into a pan. Heat over a medium heat. Pour tablespoonful of the corn fritter batter into the hot oil. Fry about 2 minutes, then turn over the other side. Remove and drain on paper towels.     

Potluck Desserts

Chocolate Corn Pudding

Pudding Ingredients:

  • 3/4 cup white full cream milk
  • 3/2 cup water
  • 1 cup grated sweet corn 
  • 1 pack white pudding powder
  • 1/2 teaspoon vanilla powder
  • 1 egg yolk

Chocolate Sauce Ingredients:

  • 1/2 cup chocolate full cream milk
  • 3/2 cup water
  • 2 ounce sugar
  • 1 egg yolk
  • 1/2 teaspoon cornstarch

Instructions:

  • In large pan, combine milk, water, corn, pudding powder and vanilla powder. Bring to boil over medium heat. In small bowl pour 2-3 spoonful of hot batter, mixed with egg yolks until blended. Pour back into the corn batter. Continue cook over low heat until boils. Pour into a mold and refrigerate.
  • Chocolate sauce:In medium pan, combine milk, sugar and water. Bring to boil over medium heat. In small bowl combine cornstarch and egg yolks until blend. Pour into the hot chocolate milk, stir well. Cook until thickens. Serve the pudding with sauce.
