Water vs. Vinegar

Water exists in solid, gas and liquid form unlike vinegar that is available in liquid form only. Water is not acidic, while vinegar is formed as a result of ethanol fermentation, making acetic acid its main ingredient. Water is tasteless ad odorless while vinegar has a strong odor. Unlike vinegar, when water freezes, it occupies a large space. Finally, water is a universal solvent, meaning many components dissolve in water. It also has a greater surface tension when compared to water.

Polarity

Even though water has a neutral charge, that is, it has equal numbers of electrons and protons, the electrons are unevenly distributed, making water molecules polar. Polar molecules are those when the component has a negative charged end and a positive charged end. Moreover, polar molecules attract each other. Both water and vinegar contain polar molecules allowing vinegar to dissolve in water.

Hydrophobic vs. Hydrophylic Molecules

Molecules that contain non-polar bonds are hydrophobic (water-hating) and are insoluble in water. In contrast, hydrophylic molecules are formed of ions or polar molecules that attract water molecules, making them readily dissolve in water. Vinegar has polar molecules making it dissolve in water quickly.

Mixing Water and Vinegar

Since vinegar is made up of water and acetic acid, it is polar and thus soluble in water. Moreover, vinegar contains hydrophylic molecules, making it highly mixable with water.
