A simple variation on skillet cornbread.
4 tbs Olive oil
2 cups meal
2 cups flour
1 and ½ cup skim milk
Garlic powder (to taste)
In a large skillet, heat olive oil over medium heat. Meanwhile, in large bowl, mix together meal and flour. Slowly stir in milk, making sure batter is somewhat stiff. Stir in garlic powder. Drop batter by rounded tablespoonfuls into hot oil.
Brown patties, 3 to 4 minutes per side for approx 8 minutes. Remove from skillet and drain on plate. Cover with foil. Repeat cooking process for second batch. (Add more olive oil to skillet and heat, if necessary). Place cooled patties in bread storage container.
SERVING SUGGESTION: Delicious when served with your favorite leafy vegetable or legume.
