It is more economical to cook at home, rather than purchase pre-packaged meals. Here are some easy suggestions of meals that can be cooked for just one person.

Chicken is a great meal starter. Purchase the skinless, boneless breasts, for easy preparation. Cook a chicken breast for 20 minutes and then cool. Cut it into bite size pieces and you have the beginning of many great meals.

You can chop some celery, one apple, one small snack size box of raisons, and 2 tablespoons of mayo. You add some of the chopped pieces of chicken. You have a fancy chicken salad. If you are not allergic to nuts, you can add a few walnuts to the mixture. It makes for a good meal on crackers.

Open one can of prepared tomato soup, and add a chopped potato, carrot, and 1/4 cup celery. Cook until vegetables are tender. You have homemade vegetable soup. For a really spicy taste, use a can of V8 juice in place of tomato soup. You can take one half package of small Velveeta cheese and add to the soup/juice mixture after the vegetables are cooked. It makes a delicious cheese soup.

Tuna cakes can be made from one can of tuna. Add one egg, and 2 tablespoons flour. Fry in a skillet, that has been coated with cooking spray. This recipe makes enough for one person.

Open a package of Ramon noodles. Instead of using the seasoning packet, add one small can of diced tomatoes to the uncooked noodles. Heat in the microwave until the noodles are soft.
