This is another healthy family favorite.
1/2 Cup canola oil
1 Cup Sugar (or mix 1/2 Cup Sugar and 1/2 Cup Splenda together)
1 teaspoon vanilla
2/3 Cup flour
1/2 Cup Cocoa (can use regular or special dark) The Special Dark cocoa creates a more cake like texture than regular cocoa.
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 Cup chopped walnuts (can subsitute chocolate chips, candy canes, etc. for walnuts if desired, or use walnuts and candy bits)
Heat oven to 350 degrees. Mix canola oil, sugar, eggs, vanilla until well blended. Measure flour- blend dry ingredients. Mix in. Stir in nuts. Spread in well-greased pan (8×8x2″). Bake about 30 minutes. Cool. Cut into sqaures.
These are a very tasty treat that is easy to make on short notice. They also travel well so they would work great for a potluck dessert.
