Chocolate Pudding
These very chocolate individual baked puddings have a melted fudge-chocolate sauce inside that oozes out as you put your spoon in.
Ingredients:
Maida - 2 cups
Baking powder - 1½ tsp
Butter - 1 cup
Powdered sugar - 1 cup
Eggs - 3
Vanilla essence - 1 tsp
Cocoa - 3 tbsp
Milk - ½ cup

Method:
Sift maida with baking powder. Beat butter, sugar together till light. Add the egg yolks one by one, beating well after each addition. Add essence and beat well. Fold in the maida alternately with milk. Gently fold in the stiffly beaten egg whites. Cover with a piece of aluminium foil, place cooking plate upturned in the cooking pan. Pour enough water in the pan to come to ½ the level of the mould. Place the mould in the water. Cover the cooking pan with the lid and press the switch to cooking and steam for 1 hr. ((Whenever you make a steamed pudding, it is very important to ensure that water or steam does not come in contact with the pudding mixture. So take care to see that the foil seals the mixture well).
While the pudding is steaming, we can use the 2 dish pan or steaming basket (line the base of the basket with foil) to cook a variety of steamed dishes like dhokla, muthia, rava idly, etc or steam vegetables or potatoes to use in any side dish, or even steam a chicken to use in sandwich or any boneless chicken preparation. You may open and close the cooker to place and remove the 2-dish pan or steaming basket while the pudding is steaming. This will not interfere with the steaming of the pudding. And, it is not necessary to monitor your pudding either. If you are around, you may switch off the cooker after one hour or the switch will move to “Keep Warm” when the water in the pan is evaporated and you can take out the pudding at your convenience.
