Caramel Apple Raisin Cake
This is one of my favorite cakes.
CAKE:
2 1/2 cups all purpose flour
2 teaspoons baking powder
4 teaspoons pumpkin pie spice
3/4 teaspoon salt
1 1/2 cups sugar
3/4 cup shortening
1 1/2 teaspoon vanilla
2 eggs
1 cup milk
2 Granny Smith apples, peeled, chopped
1/2 cup raisins
CARAMEL GLAZE
1 cup firmly packed brown sugar
1/2 cup whipping cream
1 1/2 powdered sugar
Heat oven to 350F Grease and lightly flour 13×9 inch pan. Lightly spoon flour into measuring cup; level off. In medium bowl, stir together flour, baking powder, pumpkin pie spice and salt; set aside.
In large bowl, beat sugar, shortening and vanilla until light and fluffy. Add eggs 1 at a time, beating well after each addition. Add flour and milk alternately to creamed mixture, beginning and ending with flour. Stir in apples and raisins; blend well. Pour and spread batter into greased and floured pan.
Bake at 350F for 45-55 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes.
Meanwhile, in medium saucepan, combine brown sugar and cream. Bring to a rolling boil over high heat, stirring constantly, Remove from heat; stir in powdered sugar until smooth Cool 5 minutes, occasionally. Pour glaze over cake; spread evenly cool completely
