Chocolate Caramel Turtles
1/2 pound soft caramels
2 tablespoons whipped cream
1 cup pecan halves
4 squares semi-sweet chocolate, 4 oz.
Melt caramels with cream over hot water; cool for about 10 minutes. Place pecan halves in clusters of 3 on waxed paper. Spoon caramel mixture over nuts. Let stand until set, about 1/2 hour. Partially melt chocolate over hot water. Remove from water and stir rapidly until completely melted. Let stand until lukewarm. Spread over caramel mixture.
Chocolate Cherry Candy
2 cups sugar
1/2 cup evaporated milk
Dash salt
12 regular marshmallows
1/2 cup margarine
1 tsp. vanilla
6 ounces cherry chips
12 ounces chocolate chips
1 tablespoon margarine
3/4 cup peanut butter
10 ounces crushed peanuts
Boil sugar, evaporated milk, salt, marshmallows and 1/2 cup margarine for 5 minutes, stirring constantly, as it burns very easily. Add 1 teaspoon vanilla and 6 ounces of cherry chips. Mix well until smooth. Pour at once into a buttered 9 x 13-inch pan. Melt chocolate chips, 1 tablespoon margarine and peanut butter. Stir constantly. Add crushed peanuts. Spread over cherry mix. Wait until set and then cut into squares.
