Butterscotch Bars Two with Almonds

Here is the second and I think last butterscotch bar recipe I have. I hope you like it! =) I love it….mommy…..if you are reading this….hint, hint! in the center comes out cool.

1 1/3 cups all purpose flour

2 teaspoons baking powder

1 teaspoon salt

1 cup ground almonds

1/2 cup vegetable oil

2 cups packed light brown sugar

2 large eggs

1 teaspoon vanilla extract

1 cup flaked coconut

TOPPING

2 Tablespoons vegetable shortening

3/4 packed light brown sugar

1/4 cup light corn syrup

3 Tablespoons heavy cream

1 teaspoon vanilla extract

1. Preheat the oven to 350 degrees. Lightly grease a 9 inch square baking pan.

2. Combine the flour, baking powder, salt and almonds.

3. In a large bowl, cream the vegetable oil and brown sugar. Beat in the eggs. Gradually blend in the dry ingredients. Stir in the coco nut. Spread batter evenly in the prepared baking pan.

4. To make the topping, cream the vegetable shortening and brown sugar in a small bowl. Beat in the corn syrup, cream and vanilla extract. Spread the topping over the batter.

5. Bake for 25-30 minutes , until a toothpaste inserted into the center comes out clean. Cool in the pan on a wire rack before cutting into bars.
