Burgundy Beef

2 pounds round of beef, cut in one inche cubes
1 clove crushed garlic
2 tablespoons chopped parsley
1/4 teaspoon fresh ground pepper
1 tablespoon cornstarch
1/2 cup heavy cream
2 medium onions, chopped
2 tablespoons oil
1/2 teaspoon salt
1/2 cup canned mushrooms
1/2 cup burgundy wine
Saute onions in oil with crushed garlic in heavy pot. Add meat and simmer until tender. Add chopped parsley, salt, pepper and mushrooms. In the juice from the mushrooms, add the cornstarch and mix well, then add to meat. Add wine and just before serving, stir in 1/2 cup heavy cream. Serve on rice.
