Banana Flamb
Banana Flambé is a tasty recipe.

A spectacular finale to a festive dinner; quite easy to do.
Ingredients for 4 servings:
2 limes
30-40 gms butter
2-3 sugar
4 bananas
2 tbsp brandy or rum
Preparation:
Wash the limes and squeeze out the juice, about 2 tbsp.
Method:
Use a shallow fire proof serving dish if u have such a thing, otherwise a frying pan. Into this put the lime juice, butter and sugar and cook, stirring often, over low heat till the sugar begins to caramelize and turn color. It should be no more than golden, and the mixture should still be fairly runny.
Peel the bananas and cut in half across, then slit each piece down the middle. Add to the dish, spooning the syrup over them till well coated and cook till slightly softened, about 1 minute each side. (you could do it in advance to this point, and 5 miutes before it’s to be served, nip out to the kitchen and put it on low heat to reheat.)
Switch off most of the lights in the dining area, or get a collaborator to do it for you. Sprinkle the brandy or rum over the hot bananas, and immediately put a match to it. It will burn with a flickering blue flame for approximately 30 seconds. Quickly pick up the dish and carry it to the table, and graciously accept the applause of your admiring guests.
Serve with cream.
Note For Non Drinkers:
It’s the alcohol that burns, so the residue of brandy or rum, left when the flame dies down, is completely non alcoholic.
Variation:
Non drinkers who don’t believe the last statement, or who don’t keep brandy or rum in their kitchen cabinet, can substitute apricot jam for the liquor. Cook the bananas as above with butter, sugar and lime juice in a large frying pan. To serve, lift out of the pan into a shallow serving dish. Put 1-2 tbsp apricot jam into the pan, and stir over low heat for a minute or so, till well blended. Pour the jam sauce over the bananas and serve.
