30 Fast and Easy Potluck Ideas: Part 2

These are quick and really easy ideas to bring to your potluck or party. Whether it’s for an office party, family or friends gathering party, etc. you’re sure to find something in here! This is a list you can keep for reference anytime you need a fast idea or suggestion on what to bring to a potluck.

  1. Ham and Cheese Quesadillas – On a non-stick pan put a flour tortilla.  Top with sliced pieces of ham, then sprinkle with shredded cheese.  Top with another piece of flour tortilla.  When the bottom of the first tortilla browns, flip it over to brown the other side of the other tortilla.  Remove from heat.  Put the quesadilla on a chopping board and slice in triangles ala pizza style.  You can also use a pizza cutter if you have one.
  2. Bacon-wrapped Wieners – Slice bacon into half.  Wrap around a wiener or chopped hotdog.  Secure with toothpick or skewer.  Broil or grill until crisp and golden brown.  This is a delicious treat to bring to potlucks.
  3. Sweet and Sour Meatballs – If you are pressed for time, you can buy frozen meatballs and bake them.   Then you can heat a sweet and sour sauce and pour it over the meatballs.  Or you can serve the sauce on a separate small bowl.  People will love this pot luck meatballs dish.
  4. Curry Fish Balls – Pan fry or boil fish balls, then stick them on skewers.  Dip them on curry sauce, or serve the sauce on a separate small bowl.  This fishball dish is very easy to make for potluck.  
  5. Chicken Strips or Chicken Nuggets – Buy frozen chicken strips or nuggets and bake them until crisp and golden brown.  Serve with dipping sauce.  Children love these!  It is a very easy dish to bring to a potluck.
  6. Steamed Buns – If you are in a hurry to go to a potluck party and have no time to prepare anything, buy hot steamed buns and cut them into fours.  There are barbecue steam buns, chicken steams, etc.  It’s better to slice them just before serving.  This is one of the easiest and quickest thing to bring to a potluck party.
  7. Fruit Cocktail – Pour canned fruit cocktail on a beautiful glass bowl.  Put lots of ice.  Provide a ladel if you have one to make it easier for the guests to scoop.  This dessert takes only a few minutes to prepare.  It’s colorful and delicious!   
  8. Lettuce Wraps –Wash some iceberg lettuce leaves and dry them.  For the filling, saute ground chicken (or beef), chopped water chestnuts, carrots, scallions, and season with salt and pepper.  You can also put soy sauce or hoisin sauce.  Serve on a plate with the lettuce on the side.  The party guests will enjoy making their own lettuce wraps.
  9. Crab Cakes – This is a delicious dish to bring to potluck and it’s simple to make.  In a bowl, combine canned crab meat, mayonnaise, dijon mustard, worcestershire sauce, lightly beaten egg, and breadcrumbs.  Form into patties then fry or bake them until golden brown.  Serve with dipping sauce.
  10. Parmesan Chicken Wings – In a bowl combine parmesan cheese, salt and pepper, parsley flakes and garlic powder.  Dip the chicken wings in melted butter, then dip into the cheese mixture.  Bake in 350 degrees for about half an hour or until cooked.  This is a delicious potluck dish.
  11. Sweet Potato Fries – Slice sweet potatoes into french fries sticks, drizzle with olive oil, salt and pepper, and bake until golden brown.
  12. Baked Coconut Shrimps – Season the shrimps with garlic and herb seasoning.  Dip them into flour, egg, then coconut.  Bake until crisp and golden.
  13. Garlic Tomato Prawns – This dish tastes very delicious and is very easy to cook.  First brown some ginger.  Then put the prawns or shrimps in.  Shrimps cook very fast.  When the shrimps are no longer pink, pour the garlic tomato sauce and stir until coated.  Garnish with chopped green onions.
  14. Breadsticks – Pillsbury has original soft breadsticks or garlic herb breadsticks.  This is very easy to make.
  15. Mini Pizza Bites – You can also use the refrigerated biscuits dough and turn it into quick mini pizzas.  Roll the dough into flat circles, then spread with ready made pizza sauce.  Top with shredded cheese and toppings of your choice.  Bake until golden brown.
  16. Cinnamon Rolls or Cinnamon Buns – Many people love cinnamon rolls or cinnamon buns.  Buy them ready made and slice into small bite size pieces. You can put nice colorful toothpicks on the side.
  17. Frozen Cream Puffs – No preparation needed at all!  Buy a package of frozen cream puffs.  People love these at parties and potlucks.
  18. Sausage Crescent Rolls – Use refrigerated Pillsbury crescent rolls dough.  Unravel the dough, put a wiener or sausage on each piece, roll it up then bake.  This is a delicious treat to bring to a potluck.
  19. Pepperoni Pizza Sticks – You can use the canned refrigerated breadsticks to make delicious pepperoni pizza sticks.  Separate and unroll the bread sticks dough, then lay them on a cookie sheet.  Lay the pepperoni sticks or slices on the half top of each bread dough.  Then fold the bottom half of the bread dough over the half top of the dough. Twist it to make a figure 8.  Press the ends to secure well.  You can sprinkle with parmesan cheese if you prefer.  Bake, and arrange on a nice platter.
  20. Melon and Honeydew Kabobs – Kabobs are always a hit at potlucks and parties.  Slice the melon and honeydew into chunks.  You can also use a melon baller to make them all nice and round.  Stick them on skewers, melon and honeydew alternately to give a nice orange and green contrast color.  Serve on a nice platter.
  21. Garlic Bread – You can either buy ready made garlic bread, slice them and bake, or you can buy plain french bread and spread with garlic butter then bake.  
  22. Mini Burgers – Anything mini is great for a potluck party!  Arrange mini burgers and mini buns on a nice platter, the guests will love them!
  23. Greek Salad – Toss some tomatoes, cucumber, bell peppers, red onions, olives, crumbled feta cheese, then drizzle with olive oil.
  24. Grilled Pineapples – Combine honey and lime in a bowl.  Brush this glaze mixture on the pineapple slices, and grill so that both sides will have grill marks.  These are delicious and easy to make.  This is a great idea to for barbecues, potlucks and parties.
  25. Ice Cream in Mini Cones – You can bring a tub of ice cream (chocolate, vanilla, strawberry, neapolitan, or any flavor you like) then bring miniature plain cones or waffle cones.  Don’t forget to bring an ice cream scooper too. This will be a nice refreshing dessert for the party guests.
  26. Rice Krispie Squares – These are easy to make the kids love them.  The recipe can be found at the Kelloggs website.  You can also vary the recipe by adding chocolate chips.
  27. Fried Chicken – One of the most popular crowd pleasers!  If you can, bring gravy too!
  28. Macaroni and Cheese – This dish is very quick and easy to make. Boil elbow macaroni.  Drain the pasta.  Heat up canned condensed cream of cheese soup.  Depending on the amount of your pasta, you may need 2 cans or more.  Add milk and mix well.  Add shredded cheese.  Season with black pepper.  Mix until smooth and creamy.  Put back the drained macaroni pasta.  Mix everything well.  Kids love macaroni and cheese!  This is definitely better than the boxed macaroni and cheese!
  29. Broccoli Salad – Mix broccoli florets with sunflower seeds, raisins, and crumbled bacon.  Add the dressing just before serving.
  30.
