How to distinguish fresh fish and not-too-fresh fish

Eye : bright bulging eyes , moist and bright in color , avoid choosing fish that have sunken or dry eyes

gills : bright red , clean without any stains

body : firm and elastic , should have a pleasant sea smell

skin : should be bright, luster , and moist.

Storing

* if you want to store the whole fish , scale and then gut it clean and then rinse it in cold water

* after rinse , dry the fish and then wrap it in plastic foil , they could only be stores for maximum 3 days

* if you make fillet of it, the fish can stored for a longer period of time
